Ingredients (Serves Two)
Gluten-Free Gnocchi 1 pack
Sausage 4 oz
Mushrooms 7 oz
Parmesan 2 oz
Onions 1/3 cup (chopped)
Extra Virgin Olive Oil 4 tbps
Tomato puree 2 cups
Directions:
Cut onions into small cubes.
Cut the mushrooms into slices.
In a pan, add extra virgin olive oil and onions. Saute for a 3 minutes.
Then, add sausage (remove casing and break into small pieces) and continue cooking for 5 minutes.
Next, add mushrooms and cook for 5 minutes.
Then, add tomato puree. Add salt and pepper to taste.
Then, cover the pan and cook for 30 minutes on low heat.
In a separate pot, bring 2 quarts of salted water to a boil.
Once water is boiling, add gnocchi and cook for 2 minutes (or until they all float). Drain well.
Finally, add gnocchi to the sausage and mushrooms. Stir for 1 minute. Add grated parmesan.
