Ingredients (Serves Two):
Gnocchi Pesto 1 pack
French Beans 1 cup (cut in half)
Idaho Potatoes 1 potato, medium
Basil 1 cup
Garlic 1 clove
Extra Virgin Olive Oil 4 tbsp
Salt
Pepper
Directions:
In a pot, bring 2 quarts of salted water to a boil.
Dice potatoes in 1/2 inch cubes.
Next, wash beans and cut in half. Then, add beans and potatoes to boiling water and cook for 8 minutes.
In another pot, add extra virgin olive oil and garlic (cut very fine). Cook on low heat for 2 minutes.
Then, drain and add potatoes and beans to oil and garlic (keep boiled water for gnocchi). Cook for 6 minutes. Add a little bit of cooking water to the mixture/sauce.
Add gnocchi to the salted boiling water and cook for 2 minutes (or until they all float). Drain well.
Add gnocchi to sauce. Stir for 1 minute.
Last, add grated parmesan cheese and fresh basil leaves on top of gnocchi & sauce.
